SOUP

Everyone has their own chicken soup recipe, so here are two of my favorites
one is very simple the other is alot of steps, but so well worth it!

East Carrot Ginger Soup:
Roast carrots (aprox 8-12) on cookie sheet with salt,white pepper & olive oil until soft . Puree in food precessor or blender & add freshly grated ginger (small piece) & then place in pot with 1 qt. chicken stock & simmer EASY & so delicious!

Wild Mushroom Soup:
**I like lots of different mushrooms in this but use what you like
Chop portabellos, cremeri, shitake & white mushrooms (1 box or bag of ea) & CHOP WELL
& saute in pan with a tablespoon of butter & 2 tbps of olive oil, fresh thyme, one chopped shallot & a bit of flat leaf italian parsley. Clean, slice & saute one large leek & then add to mushrooms. Add 1/2 cup of dry white wine & reduce. In a pot, simmer a qt. of good chicken stock & add mushroom & leek mixture & simmer for 20 minutes, Add 1/4 cup of half & half or heavy cream at end. DO NOT boil.
Delicious!!!!!

Florida

Well, back in Florida for a quick weekend getaway from the snow & some GREAT dining in Ft. Lauderdale & Miami!

In Ft Lauderdale, a 4 star wonderful Italian Restaurant is Casa D'Angelo.

This is a beautiful place, with both indoor & outdoor dining. mY fifth or sixth trip there & well worththe wait if you have no reservation (but I strongly suggest one) Everything is homemade- everything! The antipasti (appetizers) are excellent- especially the tiger prawns wrapped in pancetta, then grilled and served over broccoli rabe- yum! The beef carpaccio salad with shaved parmigiano reggiano, truffle oil and fresh lemon vinaigrette is outstanding so I had the salad and also had the special- one of my favorites & a very seasonal short lived item- zucchini blossoms. These delicate flowers are the buds off zucchini plant, then they are stuffed with goat cheese & marscapone & then lightly sauteed. Just fantastic! The specials are the way to go,
and all the pastas are homemade, so we opted for the gnocchi, in a light red sauce such as the bison filet mignon in a port wine reduction, the whole grilled branzino is excellent ,veal chops done a few ways,, and the Grilled Bistecca- a flavorful marinated NY strip, served sliced with sweet vidalia onions and mushrooms over a baby arugula- mouth watering!

Prime 112 in the hear of Miami's South Beach is a hot spot- on Ocean Ave with both indoor & outdoor dining, a happening bar scene, and the sister restaurant Prime Italian across the street, equally good & busy!

Most definitley a steak place for sure although they do have seafood choices, including a 4 lb lobster @ $30 per lb and a seafood tower of cold blue point oysters, clams, lobster & HUGE shrim- 1/4 lb each!!!
Very pricey but an outstanding stellar dining experience, with poke tuna , seaweed, cucumber and avacado with a spicy japanese mayo dipping sauce, the signature salad of thinly sliced radishes, asparagus, celery fennel, grape tomatoes, mixed greens, in a light and creamy green goddess dressing was wonderful.

The steaks- outrageous- the filet mignon on the bone was fork tender, as were the dry aged and the organic steaks porterhouses,, and so much more.
The sides- what can I say - sweet cream corn with scallions, 4 cheese mac & cheese, truffle french fries that were crispy, not greasy or soggy. All the steaks are offered with either a sauce (bearnaise, peppercorn, au poivre, etc.) or "butters" such as gorgonzola butter, (fabulous!)
and the wine list is quite exceptional. **Reservations a must!!!!
